Getting to church on time can be difficult for those that serve, especially with children. Getting everyone dressed (without clashing too much), combing hair, and gathering all the stuff you need to teach/serve…Oh no, what about breakfast? It can be completely crazy. Here is a recipe to mix ahead of time. In the morning, just add the few remaining ingredients.

Breakfast Muffins:

  • 3/4 cups raw sugar
  • 1/2 cup flax seed meal
  • 2 1/2 cup wheat flour
  • 1/2 cup flax seeds
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup walnuts
  • 1/2 cups shredded coconut
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 3/4 cups water
  • 1/2 oil
  • 2 cup Blueberries, apple, banana, raspberries, or strawberries (1bag/can)

Mix dry ingredients in a gallon bag. When ready mix oil and water into the bag with the fresh/ frozen fruit. Scoop into muffin cups with an ice cream scoop. Back 400 degrees for 25 min.

Pumpkin: 1 tsp ginger and 1 can of pumpkin.
Apple Sauce: 1 cup apple sauce, 1 1/4 cup water (instead of 1 3/4)
Banana: 1/4 tsp nutmeg, 1 tsp ginger, 2 bananas (Haven’t tried yet. Let me know.)
