Best Ever Chocolate Cookies

  • 2 cups sorghum flour
  • 1 cup rice flour
  • 1/2 cup tapioca starch
  • 1 1/2 cup sugar
  • 1 1/4 tsp salt
  • 1 tsp psyllium fiber
  • 1/4 cup flax seed meal
  • 1 tsp baking soda
  • 1 tsp cream of tarter
  • 2 tsp guar gum
  • 3/4 cup organic shortening
  • 1 cup walnuts
  • 1 cup chocolate chips
  • 1 Tbsp molasses
  • 2 tsp vanilla
  • 1/2 cup oil
  • 2/3 cup water or almond milk

Lightly grease cookie sheets and preheat oven to 350 degrees.  Mix dry ingredients first all but chocolate chips and walnuts.  Cut shortening into mix.  Add in chocolate chips and walnuts.  Mix oil then water.  You may have to use your fingers to mix all the ingredients, but don’t use a mixer.  I like small cookies, so I use a 1 inch cookies scoop.  Bake for 15 min.

These are the most amazing gluten free, dairy free, egge free, soy free chocolate chip cookies!  Even people that can eat anything, love them.
