Gluten Free Resurrection Rolls

(I used raw sugar instead of  brown sugar.)

I’m so excited!  I finally have a gluten free, dairy free, soy free, egg free, nut free Resurrection Roll Recipe that tastes GREAT!  This is completely yummy even for kids that aren’t allergy sensitive.  They are light and airy, and very sweat.

  • 2 tablespoons shortening (I used butter)
  • 1/4 cup sugar
  • 3/4 cup of rice milk, room temperature
  • 1 packet yeast (about 1 tablespoon)
  • 1 Tbsp flax seed meal
  • 1/4 cup sunflower oil
  • 1/2 cup potato starch
  • 1 cup corn starch (or arrowroot)
  • 1/4 teaspoon baking soda
  • 2 1/2 teaspoons guar gum
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract (5 drops)

Coating:

  • 1/2 cup brown sugar
  • 1 teaspoons cinnamon

Filling: Gluten free marshmallows

  1. Prepare pan: rub liquid parchment on the baking pan and preheat oven to 375
  2. Mix shortening with sugar.
  3. Mix rice milk and yeast. (set aside to proof…that means bubble)
  4. Add the rest of the roll ingredients to the sugar and shortening.  I add dry then wet.
  5. Add the milk mixture to the rest of the ingredients.
  6. Mix well.
  7. Mix the brown sugar and cinnamon.
  8. Flatten the ball of dough in your hand, place a marshmallow in the middle and squish dough around it. (You may need to 1/2 of large marshmallow)
  9. Roll the marshmallow ball in the cinnamon sugar mix and place them on the baking sheet.

Bake for 20 min. at 375 degrees Fahrenheit.

Makes 8 rolls.

  • 1/4 cup oil
  • 1/4 cup organic shortening
  • 1/4 rice flour

 

Easy Resurrection Rolls

Serves 24 if each pack has 12 rolls
  • 2 croissant roll refrigerator dough
  • 4Tbsp melted butter
  • 1cup sugar and 1Tbsp cinnamon
  • 1pk. Large marshmallows

Divide the croissants and flatten. Mix sugar and cinnamon together. Dip rolls in melted margarine, then into sugar mixture. Wrap roll around a marshmallow, covering completely. Dip once more into butter, and again into sugar. Place rolls in a large greased pan and allow to rise till double (about 35 minutes).

  • Bake at 375 degrees F for about 15 minutes, or until done. Rolls should be completely empty when cooled…like the empty tomb.
  • give each child one piece of roll dough—that represents the tomb
  • give each child a marshmallow—that represents Jesus’ body
  • roll each marshmallow in butter and then in sugar mix–represents the oils and spices the body was anointed with upon burial.
  • Rap the tomb around the body and seal it tightly—they rolled a stone over the tomb to secure it.
  • Roll the tomb in butter, then in sugar mix, and let them rise. Don’t wait for three days but to kids it could seem like that. Jesus’ followers had to wait too.
  • Bake at 375 for 15 min. when finished notice that the tomb is now empty. Jesus is alive

  • 3 tablespoons granulated sugar
  • 6 tablespoons butter
  • 3 tablespoons dry milk
  • 1 1/2 teaspoons yeast
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1 tablespoon cinnamon
  • 24 marshmallows

Combine first 8 ingredients. Let rise until double. Divide into 24 balls and flatten.

    I have a question about the allergy-friendly Resurrection Rolls – we made them today and it was fun! They are all gone already too (yum)…however, we followed the recipe and even halved the marshmallows (GF ones) but I am wondering if they were too large – they burst out of the rolls while baking and ours looked more like volcano rolls (according to our 10 year old!) or maybe more like when Moses struck the rock to bring water! They tasted great and did have an empty cavity (some more than others) but looked kind of crazy! Can you please advise? Thanks much!
