The Breakfast Cookie Mix (click to see post)

Dry mix ahead:

  • 2 cups rolled oats
  • 1/3 cup raisins
  • 1/3 cup whole wheat flour
  • 1/3 cup wheat germ
  • 1/3 cup flaxseed meal
  • 1/3 cup coconut flakes
  • 1/2 cup walnuts, chopped (I crush them in my hands)
  • 2/3 cup soy flour (for non dairy, use powdered milk to add dairy)
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1 1/2 salt
  • 1/4 cup brown sugar
  • (Might want o try 1/3 cup chocolate chips)

Wet mix right before baking:

  • 1 1/2 cups apple sauce

1. Preheat oven to 350 degrees and grease large cookie sheet
2. Mix 1 1/2 cups apple sauce into the dry mix.
3. Scoop out with an ice cream scoop and smash with your fingers (to 1/2”-3/4”)
4. Bake for 20 minutes, place on cooling rack and turn off the oven
